Large quantities of finely-ground cocoa liquor are required, with the typical production capacity between 1 and 5 t/h. For more than 30 years, NETZSCH-Feinmahltechnik has been supplying machines for fine-grinding pre-processed cocoa liquor to the cocoa-processing industry.
Finely-ground cocoa liquor is separated into liquid cocoa butter and solid cocoa press cake in a chamber filter press. While the cocoa butter is filtered and discharged in liquid form or into blocks, the compact cocoa press cake is pre-milled in roller crushers and then dry-milled into finely-ground cocoa powder.
As early as a millennium before the Europeans discovered the Americas, cocoa was already known to the natives as both a food and a natural stimulant. At first the Europeans did not like the taste of the unsweetened cocoa mixture. This changed though with the addition of honey or cane sugar and cocoa products quickly spread all over the world.
Dip coatings, icings and fillings differ from chocolate in that they have a higher fat content. The vegetable fats used are the primary determinants of their characteristics. Depending on the temperature, they are essentially responsible for the taste and viscosity and affect the consistency, how it feels in the mouth, the aroma it gives off and the way it melts.

As a quickly available carbohydrate, it increases performance during physical exertion and sports activities. Sugar is extracted from sugar beets, which are grown in Central Europe, as well as from tropical sugar cane.
